Meatless Monday: Dr-Cow Tree Nut Cheese

Guys and gals! I am very excited to tell you about this gourmet dairy-free cheese I finally got to check out at Dr-Cow in Brooklyn. It’s all 100% raw and organic. It’s made from nuts. And it uses pink Himalayan sea salt. I know that for a lot of you who are interested in eating a more plant-based diet (and significantly cutting down your intake of animal products) cheese is a hard food to give up. And I totally get it. Cheese tastes good. And that is why this gourmet vegan cheese is so great! It’s delicious and comes in a myriad of natural, unprocessed flavors.

I also know that some people view vegan cheese as “fake” cheese but that’s simply not the case! There’s nothing “fake” about this cheese AND it’s soooo much better for us than eating dairy cheese. So to help you rid yourself of your fears that by virtue of the fact that it’s vegan, it’s “fake”, all you need to do is briefly understand how cheese is made (because it’s the same process for dairy cheese and vegan cheese). Dairy cheese comes from taking the milk from a cow and then adding to it bacteria and other seasoning to become what we traditionally know as cheese. And the exact same goes for this vegan cheese. The only difference is the source of the milk, which in this case is a nut versus an animal. As Dr-Cow explains it:

We have made nut curd by applying the same procedures for making traditional dairy-based cheese! I made myself a little cheese platter to enjoy after my busy day in Brooklyn. What could be better than a little afternoon snack in bed?? 🙂

My favorite is the simple aged cashew cheese. It’s creamy, delicious and great on crackers. I also had the olive, indian salt and turmeric cheese for a savory treat and it was fantastic as well. And in addition to their cheeses, Dr-Cow makes delicious little desserts that are 100% plant-based. Here’s a shot of what I tried with my friend Kira…the homemade oreo, the raspberry-filled cookie and the mini cheesecake.
