Meal Inspo May 30, 2015

Today I’m sharing some snapshots of what I ate this week. My hope is that it will offer some meal inspiration for the next time you decide to try a plant-based meal or do a Meatless Monday. This isn’t everything I ate, ’cause sometimes a girl’s gotta be able to sit down to a meal without snapping a pic, but it’s a good overview of what plant-based/vegan eating actually looks like. If you follow me on instagram you’ve seen some of these pictures already and get a pretty good idea of what I’m eating each week. And while a lot of this I ate out and about, most of the food in these pics can easily be replicated at home!

BagelThis is one of my go-to bagel sandwiches. It’s a multigrain bagel with herb tofu cream cheese, cucumbers, sprouts and radish. Sometimes I switch it up and add tomatoes or avocado too. This one is from Black Seed Bagel. And seriously, how pretty are those watermelon radishes?

BowlThis bowl is so simple and delicious. It’s steamed cabbage, steamed broccoli, roasted tomatoes, avocado and housemade hummus all over brown rice and topped with a lemon tahini dressing. This one is from Feel Food in Gansevoort Market.

CharcoalCharcoal lemonade! That’s right, charcoal. You may all know about charcoal already and I am just late to the game, but last week I attended the Vegan Beauty Affair here in NYC and was introduced to this juice company and this purifying charcoal drink. Due to its absorptive properties the activated charcoal in this drink binds to toxins and helps you eliminate them from your body. And don’t worry, it tastes just like lemonade! I picked this up at Mulberry & Vine in Tribeca.

Blueberries & CerealJust a super simple breakfast of 365 brand morning O’s and a ton of organic blueberries. All with almond milk.

Juice Press SmoothieThis clean green smoothie from Juice Press is made with homemade almond milk, banana, baby spinach, hemp protein, almond butter, kale, coconut nectar and chia seed. It is SO delicious! And obviously it was so good I had to start drinking it before I had a chance to snap a pic.

Lentil DalI made this lentil dal over rice and it is such a delicious and healthy dish. I made a big pot and it served me for four meals throughout the week. It’s made up of lentils, tomatoes, onions, garlic, jalapeño, cilantro (if you’re like my friend Heather and hate cilantro, you can leave it out!) and lots of fragrant spices. I’ll share this exact recipe in a future post.

Juice Press bagelI stopped at Juice Press again and this time picked up an almond butter cup smoothie made with homemade almond milk, cacao, raw agave, banana, raw almond butter, ice and cinnamon. I also had their schmear bagel made with marinated kale, cucumber, rosemary cashew cream cheese and sesame dressing. One of my favorite bagel sandwiches out there.

There are so many delicious plant-based options…the list goes on and on. I will share more weekly posts like this in the future. Have a great weekend!
