Meatless Monday Bagels

Recently I’ve decided that in addition to posting actual recipes on Meatless Monday, I’m also going to post Meatless Monday meal inspiration for all you busy people on the go who don’t have time to cook, but are still interested in eating a little more plant-based, a little healthier and a little kinder. These meal inspiration posts will give you an idea of the plant-based meals I eat when I’m out and about and don’t have time to cook.

So today we start with bagels! Bagels are an easy way to grab a quick, delicious, plant-based lunch on the go.

Bagels

My bagels almost always look something like this:

  • whole grain or everything bagel
  • tofu scallion, herb or vegetable cream cheese
  • avocado (for healthy fats!)
  • tomatoes
  • sprouts
  • cucumbers

And yes you read that right…tofu cream cheese. It exists and it is pretty amazing. NYC has turned me into a tofu cream cheese believer. Before I had tofu cream cheese at an actual bagel restaurant I had only had store-bought tofu cream cheese and it wasn’t my favorite because it didn’t taste or feel the same as regular cream cheese. BUT when I get tofu cream cheese at an actual bagel restaurant I LOVE it. And if I remember correctly that’s how it works for dairy cream cheese too…store bought is never as tasty as the stuff you get at an actual bagel shop. The tofu cream cheese I get at actual bagel spots tastes EXACTLY like regular cream cheese and is the exact same texture. So keep that in mind the first time you try tofu cream cheese…at a restaurant is almost always better than from the grocery store!

And while pretty much every single bagel place in NYC offers tofu cream cheese, I’m not sure about the rest of the country. Have you seen tofu cream cheese where you live?

If your local bagel spot doesn’t offer tofu cream cheese yet, try hummus and veggies instead for a healthy plant-based lunch.

If you’re in NYC Black Seed Bagels, Zucker’s Bagels, Pick A Bagel and Brooklyn Bagel all offer delish tofu cream cheese.
