On the Menu this Week

November 7, 2015Killer pizza? Hot cocoa? Simple meals to have at home? I’ve got it ALL this week. Now that we’ve changed the clocks and it starts getting dark at 4:30pm here, I’ve been running out of time to take photos of my food before it’s dark out. (Food blogger photography tip 101…food photos turn out best when taken in natural daylight!) So, it’s been a while since my last On the Menu this Week post. But, what I was able to capture on film this week is down right delectable! Check it out:

Jack's Stir BrewI’m not a coffee drinker so hot chocolate is my favorite cold weather drink. I’ve tried it with numerous non-dairy milks and I’ve found that I prefer soy milk in hot drinks. I picked up this soy milk hot cocoa at Jack’s Stir Brew in the West Village and it was perfection. You would never know it was made with soy milk instead of dairy milk. Luckily where ever you live, most coffee shops nowadays have milk alternatives so try your next hot drink with soy milk or cold drink with almond or coconut milk!

Vezzo'sThis weekend I was introduced to Vezzo’s Thin Crust Pizza and I was absolutely obsessed with it! It comes on the thinnest crust I’ve ever had with the most delicious marinara sauce. I had a personal pie [sans cheese to keep it plant-based] with sundried tomatoes, mushrooms and kalamata olives. So good!

Whole FoodsThe Whole Foods salad bar is always a great option for making a tasty, healthy lunch. I made this salad with arugula, mixed greens, radishes, yellow bell peppers, artichokes and cornichons (aka mini pickles). I topped it all with lemon juice and a little bit of olive oil. It’s a combination I will definitely make again.

Rice & AvocadoAnd sometimes simple flavors make the most appetizing meals. For this dish I simply paired rice with avocado and then seasoned it with pink Himalayan salt, black pepper and cumin. This combination is delicious, easy and nutritious.

Hey Tedi, as a new vegan; still sort of doing my research. I have been seeing a lot of people on the no oil bandwagon. Would love to hear your thoughts/stance. Thanks!!

Hi Tracey! I do agree that it is healthier to skip oil but I do still use it in small amounts occasionally. And I definitely use a lot less nowadays than I did before.
