Creamy Kale & Millet by Yum Universe

Kale & MilletIt’s Meatless Monday once again and today’s recipe for creamy kale & millet comes from wellness coach, blogger and cookbook author Heather Crosby of Yum Universe. Heather has an amazing story about transforming her health through plant-based eating. In her early twenties Heather was faced with some very serious and scary medical problems. Even though she saw lots of doctors and took lots of tests, she couldn’t get a straight answer as to what was ailing her or how to fix it. After years of searching for answers, adopting a plant-based diet ended up being the solution to her medical problems. Plant-based eating helped her so tremendously that she now has almost complete relief from her once chronic and debilitating symptoms. A pretty awesome story of transformation, right?

Now Heather is a recipe creator extraordinaire and this recipe is no exception.  It’s really something special. I’m craving it right now as I’m writing this and I just had it for lunch two hours ago! It’s kale and millet mixed with a delicious non-dairy cheesy-tasting sauce (which makes it so much better for us than an actual dairy cheese sauce). The sauce is made out of cashews, garlic, water, coconut oil, nutritional yeast and lemon juice. It’s so savory and delicious. It makes a great lunch, dinner, snack or side dish.

It actually reminds me of an adult version of macaroni and cheese…although it would be great for kids too. It offers us a delicious, healthy way to eat lots of nutrient-dense kale. And every ingredient in this dish is nutritious and health-promoting.

And FYI…Don’t mess with the steps for this recipe as I did a couple times when I was being impatient and trying to cut corners…it never turned out as good as it does when I follow her directions exactly. She’s got it down to a science so take her word on exactly how to make it!
