Roasted Asparagus “French Fries”

It’s Meatless Monday once again and today’s recipe will make the perfect addition to your meatless recipe collection. I’ve been calling this recipe roasted asparagus “french fries” because the asparagus turns out so tasty that you will want to pop piece after piece in your mouth just like french fries and devour them. This recipe makes for an excellent side dish to any meal but it also makes a great snack on its own. Plus, I like to roast the asparagus long enough so that the tops become a little crispy, giving you that crunch like a french fry. Hope you enjoy!

Roasted Asparagus “French Fries”

Serves: 4 servings
Ingredients
  • 1 bunch asparagus, trimmed
  • 1 lemon, sliced
  • 4 tablespoons olive oil
  • pink Himalayan salt, to taste
  • black pepper, to taste
  • garlic powder, to taste
Instructions
  1. Preheat oven to 350°.
  2. Place asparagus on baking sheet and drizzle with olive oil. Lightly toss asparagus to coat all pieces. Season with salt, pepper and garlic powder to taste. Place sliced lemon on top of asparagus.
  3. Roast for 25 minutes. Serve hot and enjoy!
Notes
If you don’t have pink Himalayan salt you can use regular salt instead.
