Meatless Monday Vegan Tacos!

I’ve got a simple and delicious dinner idea for tonight’s Meatless Monday: vegan tacos! Tacos are always a hit and it is so easy to make them vegan. The beauty of tacos is that they can be whipped together so quickly and the exact recipe can vary depending on what ingredients you’ve got in the house.TacosTacosTacosTacosIMG_7135For the filling I used refried pinto beans and Beyond Meat beef-free crumble. This beef alternative is made from pea-protein and it is seasoned perfectly (no need to season it yourself!). Normally when I make tacos I use only pinto beans as the filling but today I included the beef-free crumble for those of you that are new to plant-based eating and think you’ll want something that tastes, looks and feels like beef (but is made from veggies). The longer you eat a plant-strong diet the more you’ll crave whole, plant-based foods (like beans) and the less you’ll crave meat or meat alternatives. TacosTacosTacosUse your favorite veggies and toppings as usual…just leave out the meat. You can even buy dairy-free sour cream or vegan cheese if you want (yes they exist!). At many grocery stores you can buy your onions pre-chopped, your guacamole pre-made, etc. and then you can throw this meal together in just about 10 minutes flat! It’s a perfect meal for those of you that have got a busy day today but want an easy-to-make, healthy, delicious plant-based dinner. Here’s how I made mine:

INGREDIENTS

  • Tortillas
  • Refried pinto beans
  • Beyond Meat beef-free crumbles (found in the frozen section of your grocery store)
  • Salsa
  • Guacamole
  • Lettuce
  • Onions, white or green, chopped
  • Tomatoes
  • Jalapeños
  • Hot sauce

DIRECTIONS

  1. Chop lettuce, onions, tomatoes and any other veggies you plan on using as toppings for the tacos. Set aside.
  2. Heat pinto beans in one pan and heat beef-free crumbles in another pan, both over medium heat until ready to serve (about 5-6 minutes).
  3. Fill tortillas with pinto beans, beef-free crumbles and top with remaining ingredients.
  4. Eat and enjoy!!
