Vegan Cheesy Stuffed Mushrooms

One of my favorite bloggers is Jessica Murnane over at One Part Plant. I’ve been following her blog since last summer and love everything about her site and her recipes. Jessica’s personality pops right off the pages of her blog. She is one of those girls that I could tell I would like right off the bat. She’s doing impressive work over in Chicago to bring plant-based awareness to the city. She’s just awesome all around.

She recently posted a recipe for Cheesy Stuffed Mushrooms. They looked so delicious I knew I had to try them out ASAP. They are phenomenal!! They make an excellent snack, side dish or appetizer. My mom doesn’t even like mushrooms but she went crazy for this recipe.

You might notice my mushrooms aren’t totally clean. And I did that on purpose! The microorganisms that live in organic soil are a great source of vitamin B12. I obviously don’t want to be able to taste the dirt on my food but a little organic soil never hurt anyone…it actually helps us!

I also took Jessica’s advice and put the extra cheesy sauce on mixed greens while I waited for the mushrooms to cook. I just added some salt and pepper and it made a great little snack.

The dairy free filling is made with spinach, onions, garlic, squash, nutritional yeast, dijon mustard and a few other yummy ingredients.
